Most rusks are a quick mix of flour, sugar and buttermilk, baked once and dried. Ours starts hours earlier, with a living sourdough culture — and it shows in the texture, the digestibility, and what's actually feeding your gut by the time you take a bite.
Our sourdough starter ferments for 2–6 hours depending on temperature, developing the acids and enzymes that give the rusk its depth and gut-friendly profile.
Jersey butter, A2 dairy ferments, seeds, tree nuts, whey isolate and prebiotic fibre are folded in after fermentation — never rushed, never mass-produced.

A traditional rusk recipe leans on white sugar, refined flour and not much else. We swapped almost every load-bearing ingredient for a functional one — without losing the crunch or the coffee-dunking satisfaction. Tap a row to see why each swap earns its place.
Fermentation's effects, even after the organisms die.
Lactose predigestion. The kefir/Maas cultures break down lactose before baking. The lactose reduction already happened — that benefit doesn't need living organisms in the final product to be true. This is a legitimate, testable claim ("naturally lower in lactose" or "easier to digest for lactose-sensitive"). Protein/gluten modification. Same logic — fermentation partially breaks down casein and gluten proteins into smaller peptides before the bake. That structural change is baked in (literally) regardless of whether the bacteria survive. Phytic acid reduction. Same mechanism, same logic..
Whey protein isolate (roughly 80% protein by weight) lift the protein content well above a typical rusk, making it a more satiating snack rather than a pure carbohydrate hit.

Every functional claim on this page traces back to a specific ingredient and a specific mechanism. Here's what's actually happening.
Prebiotic fibre. Inulin (Chickory Root), bran and seeds aren't digested by you — they feed the beneficial bacteria in your gut, supporting a more diverse microbiome.
Double fermentation. A sourdough culture ferments the dough - breaking down proteins, while kefir and amazi bring live dairy cultures into the mix before it's even baked, breaking down lactose.
Reduced phytic acid. Long fermentation is understood to partially break down phytic acid and gluten, which may ease digestion for some people.
Protein density. Whey isolate and eggs push protein well above a typical rusk, supporting satiety alongside the fibre.
A number of customers who track their glucose with a continuous glucose monitor (CGM) have reported a noticeably smaller spike after eating these rusks compared with a standard baked snack. There's a real, well-understood mechanism behind that — and an important limit to what it means.
Fat slows gastric emptying. The butter and seed content in the rusk slows how quickly the stomach releases its contents into the small intestine, which is where sugars start entering the bloodstream.
Xylitol's low GI. With a glycaemic index around 13 versus ~65 for sucrose, the sweetener itself is absorbed more slowly and only partially metabolised.
Protein and fibre co-ingestion. Eating carbohydrate alongside protein and fibre is well established in nutrition science to flatten and slow the overall glucose response, compared to carbohydrate eaten alone.
A smaller glucose spike is not the same as a smaller total glucose load. Some research suggests high-fat meals can produce a flatter but longer elevated-glucose period, rather than genuinely less sugar being absorbed overall.
CGM reports referenced here are self-reported, individual, and anecdotal — they are not the result of a clinical trial, and individual physiology varies significantly.

These rusks are genuinely more nutrient-dense than a standard shop-bought rusk — more fibre, more protein, a gentler sugar profile. They are not, however, a low-calorie or fat-loss food. Butter, seeds and tree nuts are calorie-dense by nature.
Enjoy them as the thoughtful, better-for-you indulgence they're formulated to be — not as an unlimited snack. Moderation still matters, even with a genuinely better rusk.

This nutritional information is a formulation-based estimate calculated from the recipe's raw ingredients, not laboratory analysis of the finished product. Values will shift with ingredient brand, batch variation, and final dry weight.
At roughly 12g net carbs per rusk, they fit into many moderate low-carb approaches, but a strict ketogenic diet (typically under 20–25g net carbs a day, total) would need to budget carefully — one rusk could be a meaningful share of that daily allowance.
They're formulated with a lower sugar and lower-GI profile than a standard rusk, but they are not a diabetic-specific product and haven't been clinically tested for glycaemic response. Anyone diabetic or on glucose-lowering medication should check with their healthcare provider and monitor their own response.
Classically — dunked in coffee or rooibos. They're calorie-dense, so we'd suggest one or two as a satisfying snack rather than a whole pack in one sitting.
However - since we crafted this to be great tasting without being dunked, many people love this as a snack on the go by itself.
Generally yes as an occasional treat, but note the tree nut, sesame, egg and dairy content, and the small creatine inclusion — if you have any concerns for a young child, check with your paediatrician first.
No — please keep these rusks away from dogs entirely. This product contains xylitol, which is toxic to dogs even in small amounts. It can cause a rapid, dangerous drop in blood sugar and, in some cases, liver damage.
If your dog eats any amount of this product, contact your vet or an emergency animal hospital immediately — don't wait for symptoms to appear.
